SILIENI VERJUICEVerjuice is the juice of unfermented green grapes. It is made from the grapes that would normally be left on the ground after bunch thinning. It was originally used in roman Times and was a staple ingredient of the Parisian Kitchen. Verjuice has a much less acidic flavour than vinegar or lemon juice and is a perfect substitute for either of these for a softer finish to a sauce. It also works perfectly as a marinade or poaching liquor for stonefruit.
