SWEET BRIAR MERINO X LAMB

The merino sheep is one of the oldest breeds in New Zealand. It prefers the harsher drier climate as opposed to irrigated or high rainfall pastures.
The merino thrives on the natural tussock and herb based pastures typical of the Central Otago High Country. The ground on which the Merino grazes is lower in super phosphate and nitrogen use as opposed to high rainfall or irrigated pastures.
The merino is slower maturing and has a fine grain texture to its meat. The fine texture gives a greater depth of flavour and tenderness. Crossing a merino ewe with a black face sire results in a lamb with better muscle conformation and the combination of the two, we believe, is the best tasting lamb in New Zealand.
We could have taken the easy option and put lamb out on display that is purchased from the existing meat trade, but that is not what we are about. We are about taste and have developed a supply chain where merino black faced lambs are hand picked for Rare Fare.
Slower maturing, less fertiliser, more natural grazing habitat and the fine grain in the meat is the secret to the lamb we have on offer.
