HAVOC PORK
In 1996 Ian found his ideal location to grow pigs. A place where he could rear pigs without the aid of growth promotants or antibiotics. A place where the pigs could roam free around paddocks not having to live in cramped conditions.
In 2003 “Havoc” prime pork products was established. Initially it was trips to the Dunedin Farmers Market held weekly. But Since the old Waimate butchery was purchased in 2005 “Havoc” prime pork products expanded and is now available at Rare Fare 7 days a week.
Havoc piglets are weaned at 6-8 weeks (compared to the usual 3 weeks in many places) this helps them to develop strong healthy immune systems. They are used to human contact and are transported to the abattoir in a specially designed truck with minimal stress.
Havoc products are of the highest quality. The bacon is dry cured and smoked, the sausages are in a natural casing and are made with pure meat there is minimal binder and in most cases none making them a great gluten free option. As for the prime pork cuts such as a delicious rolled roast or butterfly steak these are not pumped full of water to increase the weight likewise for the ham which is cooked on the bone or pressed for sliced ham.
